AquaSprout Farms

AquaSprout Farms is a small family farm and the first commercial Aquaponics farm in Somerset County NJ. Aquaponics is a farming practice that mimics the natural ecological processes of nature. Both Fish and plants are grown in one body of water in a closed loop system. It is a method of farming requiring about 1/10th of the water and a fraction of the land used in conventional farming. The fish waste in aquaponics provides a source of nutrients for the plants. Beneficial bacteria convert the toxic fish waste into a form of nutrients usable by the plant. By the plants consuming the nutrient they are cleaning the water for the fish. Unlike conventional farming chemical fertilizers/pesticides are not necessary, and therefore they are not used. This allows aquaponic farmers to grow truly organic produce to bring to the market. Offerings include Summer Crisp Lettuce, Butterhead lettuce, Green Curly Kale, Rainbow Swiss Chard, Cherry Tomatoes (limited), Basil, Radish microgreens, Sunflower microgreens, Pea shoot microgreens, and Broccoli microgreens.

Cabbage Throw Farm

Cabbage Throw Farm is a 1-acre market garden located in NJ’s fertile Musconetcong River Valley. Founded in 2018 in partnership with Comeback Farm, Cabbage Throw offers home chefs and food conscious consumers organically grown produce of the highest quality. Proprietors Dean and Emily are young farmers who carry a strong environmental ethic and practice minimum and shallow tillage in order to preserve the soil’s natural structure and inherent fertility. Winter Market offerings include storage crops (carrots, beets, turnips, radishes, kohlrabi, napa cabbage), fresh herbs (parsley, cilantro, thyme, sage); collards, chard, kale, lettuces, escarole, bok choy, tatsoi, fennel, onions, garlic, potatoes, baby greens (baby kale, arugula, mustard greens, spring mix, spinach); microgreens and winter squash.  Cabbage Throw is certified organic by the New Jersey Department of Agriculture. Ask about their CSA!

Primordia Mushrooms

Jesse Tobin and Matthew Sicher own and operate one of the few small, independent mushroom farms remaining in Pennsylvania. Using natural growing methods, they produce Shitake, Pioppino, Trumpet, Blue, Grey and Pink Oyster, Lion’s Mane and other mushroom varieties, that are available for online order pickup and at their stand on Saturdays 9 am to 1 pm in Scott Park.

Salvaterra’s Gardens

Salvaterra’s Gardens is a family-owned farm that started in 2008 as a small urban garden located in Allentown. Today, Salvaterra’s is located in Alburtis where they specialize in growing an exceptionally wide selection of high quality, certified organic produce. They combine the use of 1800′s Parisian-style gardening techniques with 21st century farming techniques to conserve resources while generating a high yield. Salvaterra’s Gardens’ produce is grown almost entirely by hand without the use of heavy equipment, synthetic pesticides, chemical fertilizers, herbicides or genetically modified organisms.  At the Winter Market Salvaterra’s offers lettuce mix, kale, spinach, cabbage, turnips, carrots, winter squash and apples.

Scholl Orchards

Since 1948 folks have been coming to Scholl Orchards, Bethlehem, Pennsylvania, for their superior home grown fruits. During the winter months Scholl Orchards offers a wide variety of apples, as well as pears, potatoes, sweet potatoes, onions, beets,  winter squash and other veggies.  They also offer a full range of value-added products including apple cider, apple cider vinegar, fruit butters, ketchup, tomato sauce, and hot sauces. Scholl’s practices Integrated Pest Management (IPM) and strives to grow the highest quality, best-tasting fruit and vegetables imaginable.

Raspberry Ridge Creamery (3/29, 4/12, 4/26)

Raspberry Ridge Sheep Farm began in 1995 and the Creamery is their latest endeavor to improve stewardship of their livestock and beautiful land.  It took about a year to start the creamery business which involved working with cheese makers to learn to make cheese and yogurt, with dairy farmers to learn about milking sheep, and with the state and local agencies to obtain the permits and license necessary to operate the business.  After an exciting year, Raspberry Ridge Creamery started producing cheese in their commercial cheese kitchen in June 2018.  Plans include expanding their dairy flock to increase sheep milk supply to make, age and sell more and better cheeses.  Aging is a critical component to the flavor of a cheese and their cheese cave can hold approximately 256 cheeses each weighing eight pounds.  Raspberry Ridge will be selling cheese and yogurt made with milk from their grass-fed sheep.

The Farmstead Table

Cheesemaker, Steve Dougherty, started The Farmstead Table in 2019 as a farmstead cheese operation in New Tripoli, PA, working with a farmer-partner to raise cows using organic-, pasture-based methods and crafting a variety of ripened, aged, and fresh artisan cheeses. As demand for our cheese grew, so did our need for more space and additional milk. in 2021 we started buying goat milk to make more cheese varieties, and began our hunt for some room to store and age more cheese. In early 2023 we moved our full operation to a new facility in Shoemakersville, PA. This meant leaving our farm location and farming activity behind to better focus on making really good cheese. Our off-farm evolution has allowed us to realize growth and support other “Fantastic Farms” who share our values and raise delicious, nutritious milk.

Wild For Salmon (Every Third Saturday of the Month) 

Wild For Salmon in Bloomsburg, PA, is owned and operated by Steve and Jenn Kurian. They provide high-quality, sustainable, wild-caught Alaskan sockeye salmon products at a common good price.Steve and Jenn own and operate the F/V Ava Jane in Bristol Bay, Alaska, where they harvest sockeye salmon every summer. The fish is processed and frozen within 12 hours of being caught and is brought home and sold at farm markets, restaurants, and health food stores in the area.Wild for Salmon sells a variety of salmon, salmon products, whitefish, shellfish, and pet products.

Apple Ridge Farm + Untamed Ferments

Apple Ridge Farm is located in Saylorsburg, PA – owned by Brian Bruno and run by a group of hard-working people who are dedicated to producing healthy, nutrient-dense food in a sustainable manner.  In the barn, that means raising all of their animals on pasture with access to non-gmo feed, grass, and bugs. In the fields, it means producing nutrient-dense, chemical-free vegetables by feeding the soil natural inputs and minimizing tillage. In our stone-oven bakery, it means making bread the way bread used to be made, based on three simple ingredients: flour, water, and salt. Apple Ridge starts with regionally-grown flour that’s organic, unbleached, and unbrominated. Instead of using commercial yeast they use an all-natural sourdough starter to help make their bread easily digestible again. Their baking process takes much longer than your average modern-day bakery but the end result is a product they can be proud of and that people can eat and feel good about. Some of their baked goods and most of their value-added products feature ingredients grown right on the farm. As part of their commitment to local sustainability, they fuel their wood-fired oven with slab wood, a waste product from a local sawmill.

Apple Ridge offers wood-fired sourdough breads, pizza shells, muffins, cookies, scones, granola and more. They also offer pasture-raised eggs, chicken, chicken pot-pies, bone broth, soups and vegan chili.

Flour Shop Bakery

Chef Michael Corrigan began what grew to be The Flour Shop Bakery, as a stand at the Emmaus Farmers’ Market in 2004, with rustic artisanal breads, French and Danish pastries, cookies, savory pastries, salads and soups. Their precept of utilizing fresh, local ingredients from local farmers’ markets, for the farmers’ markets where they sell their products, has grown and now The Flour Shop proudly has their own mini-farm in Bethlehem with beautiful chickens, fresh heirloom vegetables and herbs.  This fresh and local bounty is used in their crusty, naturally-bloomed, long-fermented  bread made with organic flour, as well as their sticky buns, croissants, danish, cruffins and more.

While navigating career shifts and life events in 2019, Kevin Blonski began to revisit his love for ceramics. He pitched the idea of a pottery business to his partner Sam Levisay, and they began to brainstorm. Since they both have a passion for plants (with countless houseplants in their apartment), it was only natural to gravitate towards plants and pottery – the perfect pairing.

In August 2020, after many, many months of work, planning, and thought that Earthen Goat was officially established. Since then they have worked with a variety of other Lehigh Valley based companies and creators and they continue to grow as artists and as a business. All of their pottery is handmade and kiln fired in Easton, PA.

Tucker’s Pond and Predatory Plants is a small, home-based business specializing in the cultivation of carnivorous plants, which are unique, insect-eating species known for their striking appearance and natural pest control properties. Founded in 2020, we have carefully expanded our offerings, focusing on the development of our signature Bog Barrel product while gradually increasing our inventory to meet demand.
