Summer is in Full Swing!
August is all about abundance! Mother Nature has bestowed us with a wonderful balance of sunshine, heat and rain this season, so the fruits and veggies are even more plentiful than usual. Bumper crops of tomatoes, basket upon basket of eggplant, and a plethora of perfect peaches mean bulk specials at the market this week. Take advantage of the produce windfall and preserve those summer flavors so you can enjoy them all winter long! Canning, freezing (super easy), and fermenting are just a few ways to capture the magic of the season. Nothing beats a homemade salsa, a rich marinara sauce made with heirloom tomatoes, your own sweet pickles, or a gorgeous jam. Or keep it simple and freeze corn right off the cob, or shredded zucchini for winter recipes.
