AquaSprout Farms is a small family farm and the first commercial Aquaponics farm in Somerset County NJ. Aquaponics is a farming practice that mimics the natural ecological processes of nature. Both Fish and plants are grown in one body of water in a closed loop system. It is a method of farming requiring about 1/10th of the water and a fraction of the land used in conventional farming. The fish waste in aquaponics provides a source of nutrients for the plants. Beneficial bacteria convert the toxic fish waste into a form of nutrients usable by the plant. By the plants consuming the nutrient they are cleaning the water for the fish. Unlike conventional farming chemical fertilizers/pesticides are not necessary, and therefore they are not used. This allows aquaponic farmers to grow truly organic produce to bring to the market. Cabbage Throw Farm
Cabbage Throw Farm is a 1-acre market garden located in NJ’s fertile Musconetcong River Valley. Founded in 2018 in partnership with Comeback Farm, Cabbage Throw offers home chefs and food conscious consumers organically grown produce of the highest quality. Proprietors Dean and Emily are young farmers who carry a strong environmental ethic and practice minimum and shallow tillage in order to preserve the soil’s natural structure and inherent fertility. Winter Market offerings include storage crops (carrots, beets, turnips, radishes, kohlrabi, napa cabbage), fresh herbs (parsley, cilantro, thyme, sage); collards, chard, kale, lettuces, escarole, bok choy, tatsoi, fennel, onions, garlic, potatoes

Jesse Tobin and Matthew Sicher own and operate one of the few small, independent mushroom farms remaining in Pennsylvania. Using natural growing methods, they produce Shitake, Pioppino, Trumpet, Blue, Grey and Pink Oyster, Lion’s Mane and other mushroom varieties, that are available for online order pickup and at their stand on Saturdays 9 am to 1 pm in Scott Park.
Salvaterra’s Gardens is a family-owned farm that started in 2008 as a small urban garden located in Allentown. Today, Salvaterra’s is located in Alburtis where they specialize in growing an exceptionally wide selection of high quality, certified organic produce. They combine the use of 1800′s Parisian-style gardening techniques with 21st century farming techniques to conserve resources while generating a high yield. Salvaterra’s Gardens’ produce is grown almost entirely by hand without the use of heavy equipment, synthetic pesticides, chemical fertilizers, herbicides or genetically modified organisms. At the Winter Market Salvaterra’s offers lettuce mix, kale, spinach, cabbage, turnips, carrots, winter squash and apples.
Since 1948 folks have been coming to Scholl Orchards, Bethlehem, Pennsylvania, for their superior home grown fruits. During the winter months Scholl Orchards offers a wide variety of apples, as well as pears, potatoes, sweet potatoes, onions, beets, winter squash and other veggies. They also offer a full range of value-added products including apple cider, apple cider vinegar, fruit butters, ketchup, tomato sauce, and hot sauces. Scholl’s practices Integrated Pest Management (IPM) and strives to grow the highest quality, best-tasting fruit and vegetables imaginable.

Check out their website and see not only beef, pork, lamb, chicken and eggs, but also turkey, sausage and bacon varieties, smoked meats, deli meats, jerky & snack sticks, bone broth & soups, heat & eat meats and side dishes. Breakaway Farms is happy to fulfill your online orders for pickup at the Easton Farmers’ Market on Saturdays from 9 am to 1 pm at Scott Park.
Haven Farmstead Table (vending every other Saturday; see dates below)
Haven Farmstead Table handcrafts cheese from the highest-quality, and healthiest, milk and are guided by organic and pasture-based methods. Started in 2018, Haven Farmstead’s dairy and cheese kitchen were built in New Tripoli, PA by Steve Dougherty, a cheesemaker and food entrepreneur, and Reuben DeMaster, who has been sustainable farming in northwestern Lehigh Valley for 10 years. Haven produces aged, raw-milk cheese, French-style blue, bloomy, rind-washed cheeses and fresh cheese. They also offer cultured butter and salami.

Apple Ridge Farm
Apple Ridge Farm is located in Saylorsburg, PA – owned by Brian Bruno and run by a group of hard-working people who are dedicated to producing healthy, nutrient-dense food in a sustainable manner.
In the barn, that means raising all of their animals on pasture with access to non-gmo feed, grass, and bugs. In the fields, it means producing nutrient-dense, chemical-free vegetables by feeding the soil natural inputs and minimizing tillage. In our stone-oven bakery, it means making bread the way bread used to be made, based on three simple ingredients: flour, water, and salt. Apple Ridge starts with regionally-grown flour that’s organic, unbleached, and unbrominated. Instead of using commercial yeast they use an all-natural sourdough starter to help make their bread easily digestible again. Their baking process takes much longer than your average modern-day bakery but the end result is a product they can be proud of and that people can eat and feel good about. Some of their baked goods and most of their value-added products feature ingredients grown right on the farm. As part of their commitment to local sustainability, they fuel their wood-fired oven with slab wood, a waste product from a local sawmill.
Apple Ridge offers wood-fired sourdough breads, pizza shells, muffins, cookies, scones, granola and more. They also offer pasture-raised eggs, chicken, chicken pot-pies, bone broth, soups and vegan chili.
Flour Shop Bakery (off on January 8th)
Chef Michael Corrigan began what grew to be The Flour Shop Bakery, as a stand at the Emmaus Farmers’ Market in 2004, with rustic artisanal breads, French and Danish pastries, cookies, savory pastries, salads and soups. Their precept of utilizing fresh, local ingredients from local farmers’ markets, for the farmers’ markets where they sell their products, has grown and now The Flour Shop proudly has their own mini-farm in Bethlehem with beautiful chickens, fresh heirloom vegetables and herbs. This fresh and local bounty is used in their crusty, naturally-bloomed, long-fermented bread made with organic flour, as well as their sticky buns, croissants, danish, cruffins and more.

Roastwell is a small batch coffee roaster operated by Jamie Bowers and Chris Corey. Their Barn Find ™ – barrel aged coffees are hand-crafted in their circa 1830’s bank barn in East Amwell New Jersey. Specialty grade beans. Aged over 40 days in actual repurposed wooden casks. No artificial flavors. A truly amazing aroma and flavor you must experience to truly appreciate.

PorTch Tea is a small family farm fermentory in the village of Vera Cruz, Pennsylvania, where the DeVault family grows tea, yerba maté, herbs, fruit, and flowers. Don’s kombucha is the best expression of the reason why they have chosen this life. The screened porch, which Farmer George has always referred to as the p-o-r-T-c-h, is the calm center of the whirlwind of activity in the greenhouses and fields. At the Winter Market, PotTch willl offer kombucha, hard kombucha, hard cider
hot yerba mate and mulled apple cider.
Zekraft – Curators of Taste makes and curates well-crafted food and kitchen items from the Lehigh Valley and beyond. Community minded, they’re inspired by the bountiful farms and artisanal creators that make our area unique. They select consciously sourced items, using local and organic ingredients whenever possible. Zekraft also offers weekly meal delivery and catering services.
At the winter market they’ll offering salads, soups, jarred desserts and granola. Return your jars and they will clean and sterilize them for future use, and you’ll receive 50 cents off every additional product purchased.

The Bubbly Goat – Vending 3rd Saturdays Only (Jan. 15th; Feb. 19th; Mar. 19th; April 16th)
The Bubbly Goat farm is an amazing place where magic happens. Barbara & Joy Leone’s herd of dairy goats turn sunshine and green grass into clean and pure milk. They take that beautiful milk and turn it into soap, lotion and candles. They only use pure and fresh milk that doesn’t travel far – it goes from pasture to product right on their farm in beautiful Hunterdon County NJ.
FD Market Mobile (vending on 2nd & 4th Saturdays)
FD Market Mobile is a sustainable goods shop and zero-waste refillery on wheels! Their refill model allows you to bring your own container and fill up on their variety of natural bulk household and personal care products. The mobile shop carries everything you need for a clean and green home. All of the products are sustainably and ethically sourced as locally as possible. Their vision is to help the Lehigh Valley reduce waste and live more sustainably, one refill at a time.
